Slice them in halves, scoop their inside, and serve them with this savory filling, which has ground beef, veggies, and tomato sauce. Next you will add them in the oven, so it would be a shame not to top them with some shredded mozzarella!

Ingredients Needed for Stuffed Zucchini With Beef and Veggies

1 tablespoon vegetable oil
2 carrots, shredded
1 red onion, shredded
5 mushrooms, sliced
9 ounces of ground beef
1 cup tomato sauce
2 zucchini
2 ounces of mozzarella
pepper
chili flakes

How to Make Stuffed Zucchini With Beef and Veggies

  1. Preheat the oven to 360°F/180°C.
  2. Heat a skillet over medium heat and add the shredded carrot. Cook it for about 1 minute, spreading it evenly in the pan. Add onion and mushrooms and cook everything for 1 more minute. Add the ground beef and cook it for another 5 minutes, until slightly brown. Pour the tomato sauce, reduce the heat, and continue cooking for 5 more minutes.
  3. Slice the zucchini and scoop their inside. Fill them with the beef and veggie mixture. Shred the mozzarella on top of the zucchinis, and season them with pepper and chili flakes.
  4. Bake them for the next 25 minutes.
